Yellow Pumpkin Halwa recipe/ How to make Pumpkin halwa
Halwa is a very popular Indian sweet variety. There are many variations of halwa prepared across India. Usually we make halwa with white pumkin which is popularly known as 'Kasi halwa'.
My grandma once prepared this yellow pumpkin halwa few years back and from then onwards this has become my favorite. In north India Gajar ka halwa is a famous dessert and yellow pumpkin halwa is a variation of this.
Since pumpkin has more water content ,the preparation of this halwa is more time consuming. But believe me guys ,the result is worth it. Unlike carrot or beetroot halwa this one has a mushy consistency. I added milk and cooked it in kadai for much time to get rid off the raw smell, you can pressure cook instead of it.
This method is more or less like Carrot halwa where we add khoya instead of milk. I dint add any colouring agent except a few strands of saffron, since i wanted to retain the colour of the veggie. The yellowish colour of the halwa will certainly make everyone tempted. Make sure your pumpkin is cooked well or else you will get the raw smell while eating.

- 4 cups grated yellow pumpkin
- 1 cup Sugar
- 1/4 cup Ghee
- 2 cups Milk
- Saffron few strands
- few Pistachios for garnishing
Peel the skin and grate pumpkin finely. I have taken nearly 3/4 kgs of pumpkin which was nearly 4 cups.
Heat 2 tbsp of ghee in a heavy bottom pan. Add the grated pumpkin to it. Cook in medium flame till quantity shrinks and it becomes mushy. It took around 15 mins for me, by then half of the raw smell was gone.
Now add the milk and sugar. Add the saffron stands too and mix well. Cook till the milk is completely reduced and it becomes mushy. Do cook in slow to medium flame. Make sure it doesn't get burned at the bottom.
Now add the remaining ghee and combine well. You will the ghee is completely absorbed. Cook for another 5 mins. Now you can see the glaze of ghee on top.
Switch off the heat and garnish with pistachios or any nuts of your choice. Tasty Yellow Pumpkin Halwa is ready.
