Vegan Mango Chia Pudding Recipe
Lately I have been seeing so much of posts on Insta of this tasy and super healthy pudding. Couldn't resist myself from making this delicious dessert. SInce I wanted to make it vegan I have used coconut milk, but you can use any milk of your choice. Chia seeds are excellent source of omega 3 and it is packed with all essential nutrients. It contains high quantity of fibre and protein. It is also a good anti oxidant. It is very essential to include such nutrients into your diet and chia seeds helps much in serving the purpose. - 1 cup Thick coconut milk or any other full fat milk
- 3 tbsp Chia seeds
- 1/8 tsp Vanilla essence
- 2 tbsp Sugar/ honey or any other sweetener
- 2 cups Mango
- Mint for garnishing
In a mixing bowl take coconut milk and add chia seeds, vanilla essence and sugar. Combine well. Cover and refrigerate overnight or at least for 3-4 hours.
In a blender take half of mangoes and blend it to a puree. (I dint add any sweetener to mangoes , but you can add as per taste)
In a serving glass pour the blended puree and the chia seed coconut milk mixture.Top it with some freshly chopped mangoes. Garnish with some mint. Tasty and healthy Mango Chia Pudding is ready.
