Unnakaya/ Malabar Snacks
Unnakaya is a spindle shaped sweet made chiefly of plantain. It originated from malabar region of India (Kannur, Thalassery, Calicut, Malapuram..). Main ingredient of this dish is steamed and mashed plantain which is a staple food.
- 5 Ripe Plantains/ Nenthrapazham
- 1 cup Grated coconut
- 3 tbsp Sugar
- 2 tbsp Raisins
- 4 tbsp Cashews Roughly chopped
- 1 tsp Cardamom powder
- Oil for frying
Cut each banana into half and steam in a steamer until it is soft. Do not overcook (later it becomes mushy and won't be able to roll). Mash it with a spoon without any lumps if needed blend it smooth.
Heat ghee, fry raisins and keep aside. Add grated coconut saute. Add nuts, sugar, cardamon powder and keep aside to cool.
Grease palm, take banana mixture (lemon sized) flatten and place the filling. Seal the edges and roll it with elongated edges. Shape remaining ones in the same way.
You can deep fry them or shallow fry. Fry both sides. Drain on towel serve hot.
