Thai Red Curry Recipe
It has been a week since I blogged and all my closed ones were really waiting for my next post. I really feel blessed for being surrounded with such encouraging friends and Thankyou all for your support. And here comes another interesting recipe which is my most favorite. Everyone loves Thai cuisine and this one of the classic dishes which is 'Thai Red Curry'. This a vegeterian version of the recipe and I have used readymade curry paste in this recipe which is easily available. - 300 gms Veggies (I used Carrot, mushrooms, baby corn, Bell peppers, Paneer)
- 1 Broccoli
- 50 gms Red curry paste
- 1/4 tsp Palm sugar
- 1.5 cups Thin Coconut milk
- 1 cup Thick coconut milk
- 2 tbsp Sesame oil
Cut and keep all the veggies ready.Cut all the veggies into cubes.
Blanch broccoli and drain the water.
Take a pan and heat oil. Add the curry paste and saute till the oil oozes out.
Add mushrooms and baby corn. Mix together and cook for 2-3 mins.
Add thin coconut milk and mix together. (Add salt if required as the curry paste already will contain some salt)
Add blanched broccoli and bell peppers. Add palm sugar and mix together. Let it boil nicely and check if all the veggies are cooked.
Add paneer atlast and mix together. Now add the thick coconut milk and cook for 2 mins.
Serve this tasty Thai Red Curry with steamed rice.
