South Indian Sambar

- 3/4 cup Toor dal
- 1 Onion
- 1 Tomato
- 2 cups Vegetables
- 1/2 tsp Turmeric powder
- 3 tbsp Sambar Powder
- 1/8 tsp Asafoetida
- Tamarind extract from a lemon size tamarind
- Coriander leaves
- 1 tbsp Ghee/ Oil
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1/2 tsp Fenugreek seeds
- Curry leaves
Cut and keep all the veggies ready.
Cook dal for upto 4 whistles adding 2 cups water. Once the pressure comes down open the lid and Mash it nicely.
In a kadai pour little oil, add onions and sauce for 2 mins. Add the veggies, salt and saute well. Add 1/4 cup water and cover and cook till the veggies are 80% done.
Now add the veggies, turmeric powder, asafoetida, sambar powder, salt and tamarind extract to the cooked dal. Mix well adding sufficient water (add little more water than what is required, as it tends to get thicker).
Keep it on medium flame. Check for salt and add coriander leaves.
In a kadai heat oil and splutter mustard seeds, cumin seeds, and fenugreek seeds. Add this to the sambar. Let it boil till the veggies are nicely cooked.
Tasty south indian sambar is ready.
