Potato Stew
Ingredients
- 4 Potatoes boiled and skin peeled
- 2 Onions chopped
- 1 Tomato chopped
- 4 Green chillies chopped
- Curry leaves
- 1 tsp Crushed ginger
- 2 tbsp Coconut oil
- Salt
- 1 tsp Mustard seeds
- 2 cups Coconut milk
Recipe Notes
In a kadai heat oil, splutter mustard seeds. Add onions and curry leaves. Add little salt. Saute till it becomes soft. Add crushed ginger and chillies. Saute till the raw smell goes.
Add tomatoes and salt. Add chopped potatoes. Mix well. Let it cook for 5 mins in medium flame.
Now simmer the flame and add coconut milk. Switch off before it starts boiling.
Serve with appam/ Idiyappam.
