One Pot Pumpkin Bhaji/ Pumpkin Curry- Karnataka Style
I got this recipe from my friend Annapoorna who is from South Karnataka. Her recipes are always unique. She doesn't take much efforts to bring out the perfect taste in her food. So here I gave a try for one of my favourites..Pumpkin bhaji and it was a hit. It can be had as a side dish with any spicy curries or even with chapathi also.
Ingredients
- 2 cups Yellow pumpkin
- 6 Green chillies
- 1/4 tsp Turmeric powder
- 1 tsp Cumin seeds
- 1/2 tsp Fenugreek seeds
- 3/4 tsp Jaggery/ Sugar
- 1 tsp Tamarind paste
- 1/2 cup Coconut
- 1 tbsp ghee
- 1 tsp Mustard seeds
- 1 tbsp Urad dal
- 1 tbsp Channa dal
- Curry leaves
- Salt
Recipe Notes
Peel skin and chop pumpkin into small pieces. Take pumpkin, chopped chillies, turmeric powder, cumin and fenugreek seeds in a cooker.
Add coconut, salt, jaggery, tamarind paste and 1/2 cup of water. Mix well and close the lid.Keep it on high flame for 2 whistles.
Once the pressure comes down, open the lid and mash it well. (You can blend it in a mixer for a smooth paste. But I prefer it to be roughly smashed)
Meanwhile heat ghee in a kadai, splutter mustard seeds, curry leaves, urad and channa dal. Add this to the pumpkin.
Super easy Pumpkin Bhaji is ready.
