
Kerala Chicken Stir Fry

Ingredients
- 500 gms Chicken
- 1/2 cup Coconut
- 1 tsp Fennel seeds
- 5 Red chilies
- Curry leaves a handful
- 2 Onions chopped
- 1 tbsp Ginger garlic paste
- 1/2 tsp Turmeric powder
- 1 tbsp Coriander powder
- 2 tsp Pepper powder
- 2 tbsp Coconut oil
- 1/2 tsp Garam masala powder optional
- Salt
Recipe Notes
In a kadai heat oil, add fennel seeds, Red chilly and curry leaves.
Add coconut and sate till it turns light brown.
Add onions and saute till turns brown.
Add ginger garlic paste and cook till the raw smell goes. Add turmeric powder, coriander powder, pepper powder, garam masala. Saute for 2 mins.
Add the chicken pieces and salt. Mix well. Cover and cook in medium flame for 20 mins. Add more pepper as per your taste. Cook till it is done.
Chicken stir fry is ready. Serve with steamed rice and rasam.
