Karuveppilai Sadam/ Curry Leaf Rice
Curry leaves is a very healthy ingredient that is been used in our everyday cooking. But the nutrients are not fully utilised as we throw away the leaves and do not consume it fully. It is mostly used for tempering only. It is packed with carbohydrates, fibre, calcium, iron and Vitamins. It is very good for your skin and hair. The best way to consume all these nutrients is by using it in a powdered form. The curry leaf powder which is used for making this rice is a perfect side dish for idly/ dosa. You can prepare this powder in larger quantity and store it in an air tuight container. This rice tastes good when you prepare it with gingelly oil. - 1 cup Cooked rice added salt
- 1 cup Curry leaves
- 2 tbsp Channa Dal
- 1 tbsp Urad Dal
- 1 tbsp Coriander seeds
- 1 tsp Cumin seeds
- 1 Garlic
- 1/2 tsp Fenugreek seeds
- 1/8 tsp Asafoetida
- 6 Peppercorns
- 2 tsp Oil
- 2 tsp Oil
- 1 tsp Mustard seeds
- 1 tsp Urad Dal
- 1 tbsp Peanuts
Keep all the ingredients ready.
In a kadai heat 2 tsp oil and Roast Channa Dal, urad dal, coriander seeds, cumin seeds, fenugreek seeds, pepper, garlic, asafoetida and red chilly adding one by one in the given order. Roast till a nice aroma comes and the urad dal turns golden brown in colour.
Now add the curry leaves and cook till it becomes a bit crispy. Do not let it burn. Switch off and let it cool. Grind it to a powder.
Heat oil in a kadai and add the tempering ingredients. Cook till the peanuts are cooked.
Now add the cooked rice and mix well.
Add required amount of the grinded powder (approximately 2 tbsp) and combine well. Add salt if required.
Karuveppilai Sadham/ Curry Leaf Rice is ready.
