Idli podi or Idli Milaga Podi (popularly known as Gun powder) is a South Indian Condiment which usually accompanies idly or is prepared by roasting lentils, spices and red chillies. I love those piping hot idlis with milaga podi and gingelly oil. Sometimes when I have some idlis leftover I would love to make idly Upma using this idli podi. This idly Upma with hot tea will make a great pair. This podi can be sprinkled over when you make Egg dosas. It tastes delicious. This idli podi can literally be a saviour when you feel lazy to make chutneys. Learn how to make this flavourful Idli Milaga Podi which can be served with idli/ dosa.
- 3/4 cup Channa dal
- 3/4 cup Black Urad Dal
- 2 tbsp Coriander seeds
- 1/2 cup Sesame seeds
- 25 Red chillies
- 1 cup Curry leaves
- 15 Garlic pods with skin
- 1.5 tsp Hing
- 2 tsp Oil
- 1/2 cup Rice
Keep all the ingredients ready. (Rice is not shown below). Make sure your ingredients are dry so that the shelf time may remain longer. If you do not like the colour to be dark you can use white sesame seeds instead of black one and also use white urad dal. You can try adding byadagi chillies for a nice red colour.
Heat oil in a kadai and add Channa Dal. Roast till it become slight golden brown.
Now add urad dal and rice. Roast till the rice starts popping.
Add coriander seeds, curry leaves and roast till a nice aroma comes.
Now add sesame seeds and mix well. Add red chillies and sauce everything till the sesame seeds starts spluttering. Do not let it burn.
Switch off and add salt, hing and garlic. Spread it in a wide plate. Once it is cooled grind it to a powder.
Mix this Milaga Podi with gingelly oil and serve with hot Idlis.
