Idichakka Thoran/ Tender Jackfruit Saute
Jackfruit is one of the seasonal vegetables of Kerala. It is rich in fibre and many different varieties of jackfruit are available. Idichakka Thoran/ Tender Jackfruit Saute is one such dish which can be served with Kanji or rice.
- 1 Tender Jackfruit/ Idichakka
- 2 cups Grated coconut
- 4 Shallots
- 1/4 tsp Cumin seeds
- 2 Garlic pods
- 5 Green chillies
- 1/2 tsp Turmeric powder
- 1/2 tsp Chilly powder
- 2 tsp Coconut oil
- Curry leaves
- 3 Dry red chilly
- 1/2 tsp Mustard seeds
- 1/4 tsp Urad dhal
- 1 cup Water
First remove the skin of Idichakka (Tender jackfruit). Apply oil on palmas and knife. Cut jackfruit into half and remove middle portion of jackfruit. Then cut it into small cubes.
Pressure cook the pieces adding turmeric powder, chilly powder, salt and water. Wait for 1 whistle and Switch off the stove.
Once pressure is released, open the cooker and smash the pieces with a knife or use a blender to crush the pieces. (They split into shredded threads)
In a pan heat oil, add mustard seeds, urad dal, dry red chillies and curry leaves. Let it splutter.
Add crushed jackfruit and mix well.
Coarse grind coconut, green chillies, cumin,garlic, shallots and add this to the mixture.
Mix well. Tender Jackfruit Saute/ Idichakka Thoran is ready.
