How to make Idli Dosa Batter for Super Soft Idlis
Idli is one such thing which is literally a part of South Indian culture. Wherever we go and howmuchever we explore cuisines, lastly our heart always crave for home cooked Idlis. Early morning after a good shower, piping hot idlis with diluted coconut chutney and a hot cup of filter coffee...yumm it will be my favourite part of the day. During school days I used to boast among my friends that no one can make softer idlis like my grandma does..and I still believe the same. There are several methods of making Idli dosa batter across our country. Some people add poha, some doesn't add fenugreek seeds, but this one (which my grandma had taught me) works like a magic for me. I get those perfect spongy soft idlis every time. Make sure you use whole urad dal to get the fluffy batter. You can use splitted one too, but the batter may not rise so much. Learn the traditional way of making Idli/ Dosa batter to get perfect soft idlis.
- 4 cups Idli rice
- 1 cup Whole Urad Dal
- 1 tbsp Fenugreek seeds
Wash and soak rice(in one vessel), Urad dal and fenugreek seeds(these both in another vessel) separately for 3-4 hours.
Add soaked rice and approximately 1.5 cups of water to the grinder. Grind it till it becomes a smooth paste. It takes approximately 25 mins. Adjust the quantity of water accordingly. Transfer this to a bowl completely.
Now add urad dal and fenugreek seeds. Grind it till becomes fluffy. Add water at regular intervals. Do not grind it too much also. The softness of idlis mainly depends on the consistency of urad dal. To check this drop a bit of grinder dal into water. If it floats like how it is shown below then it is perfect to stop at this stage.
Now transfer this to the grinded rice batter. Add sufficient salt (normally I use rock salt). Mix it well with hands. Leave it overnight (approximately 9 hours) for fermentation. Make sure you keep the batter in a larger bowl as it raises approximately double in volume after fermentation.
Pour water in an idli vessel and heat it. Put a wet cloth on idli plate and pour the batter.Cover the lid and let it cook for 10 mins. Once it is done reverse the plate and sprinkle water so that the idli comes out smoothly.
Serve this piping hot idlis with your favourite chutney.
