Ingredients:
- Cooked basmati rice – 2 cups
- Mixed vegetables – (Onions, Carrots, Beans, Cabbage, Red, yellow and Green bell peppers)
- Green chillies , Garlic and Ginger – cut into thin slices
- Spring onions – 1 cup
- Sugar – 1/2 tsp
- Salt
- Soy sauce – 1 tsp
- Crushed Pepper
- Olive oil – 2 tbsps
- Eggs – 1
- Turmeric powder – 1/4 tsp
Method:
In a pan take oil. Add onions, sugar.
Add chillies, garlic and ginger.
Add all the veggies except bell peppers.
Once the veggies are half cooked add soy sauce, pepper and some salt.
In a separate pan take oil and cook the bell peppers.
Remove the bell peppers and add some more oil and add eggs. Sprinkle some turmeric powder ,salt and pepper.
Add eggs, cooked rice and bell peppers into the veggies. Stir well and serve hot..
