Cucumber Pachadi/ Vellarikka Pachadai
- 1 Cucumber medium size
- 1 cup Shredded coconut
- 1/4 tsp Cumin seeds
- 1 Garlic
- 2 Green chillies
- 1 cup Sour curd
- 1/4 tsp Mustard seeds
- 1/4 tsp mustard seeds
- 3 Dry red chillies
- 2 string Curry leaves
Slice cucumber into small cubes and boil adding 1/4 cup of water, salt and a slit green chilly.
Take coconut, cumin seeds, green chilly and garlic in a blender and grind it to a fine paste. Add mustard seeds and just crush.
Add this to the cooked cucumber and boil for 2-3 mins.
Mix curd well and add it to the cucumber. Do not boil. Cook it just for a min and switch off the flame. Add more curd if required.
Temper with the given ingredients.
Vellarikka pachadi is ready.
