Carrot Korma for Appam/Idiyappam
This carrot korma is very healthy and tastes very good with Appam and Idiyappam. It has a mild sweetness and delicate flavours, so your kids will love this for sure.
- 2 Carrots
- 2 Tomato
- 2 Onion chopped
- 1 spring Curry leaves
- 2 Red chillies
- 2 cups Coconut milk
- 4 Green chillies
- 2 tsp Coconut Oil
- 1/2 cup coriander leaves
- 1 piece Ginger
- 4 Garlic
Blanch carrots and tomatoes. Roughly smash carrots. Peel off the skin of tomatoes and blend it to a smooth puree.
Grind the given ingredients to a paste.
In a kadai heat oil, add red chillies, curry leaves. Add onions and saute it till it turns brown.
Add the grinded paste and saute till the raw smell goes.
Add smashed carrots and pureed tomato. Add salt and cook for 2 mins.
Add the coconut milk and let it come to boil.
