Carrot Chutney – How to make tasty Carrot Chutney for idli, dosa and chapathi

Carrot Chutney - How to make tasty Carrot Chutney for idli, dosa and chapathi

I sometimes feel bored of that regular coconut chutney but a bit hesitant to do experiments with chutneys, since at my house the people are so used to the coconut chutney . Eventhough some variations are accepted with chillies (either red or green), they never give a try for these kinds. But surprisingly this chutney was a hit. This chutney will definitely be a hit at your home too due to its vibrant colour and taste. Your children are gonna love it for sure. Make sure you cook the carrots perfectly soft and do not overcook as it may lose its nutritional values and it may not give you that exact colour. You can try other variations of these chutneys by substituting with different veggies. You can also use this chutney as a sandwich spread for your kids and top it with grated paneer or any sauted veggies.

Benefits of Carrots

Carrots are rich in Vitamin A, Anti oxidants and other nutrients. It is also rich in minerals and fibres. The beta carotene is very much useful for your skin and eyesight.

Ingredients

  • 1 Onion
  • 1 Tomato
  • 1 big Carrot
  • 1 tbsp Urad dal
  • 1 tbsp Channa dal
  • 5 Red chillies
  • 2 tbsp Coconut
  • 4 Garlic
  • 1 tsp Oil
  • Salt

To temper

  • 2 tsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Urad Dal
  • Curry leaves

Recipe Notes

Keep all the ingredients ready.

In a kadai heat oil and add urad and Channa Dal. Cook till it turns slightly brown. Remove it separately.

 

In the same kadai add onions and saute till golden brown.

 

Add tomatoes, carrots, garlic and salt and cook till the carrot turns soft.

  

Add red chillies and coconut. Saute for 2 mins and switch off. Let it cool down.

Grind it along with the roasted dal and little water.

Temper it with the given ingredients. Tasty Carrot Chutney is ready.
