Capsicum and Garlic Rice
Today I made this colourful Capsicum and Garlic rice for lunch. This is very easy to prepare and its perfect for your kids lunchbox.
- 1 Onion
- 2 cups Capsicums (red, green and yellow)
- 7 Garlic
- Coriander leaves
- 1 cup Basmati rice
- 2 tbsp ghee
- 1 tsp Cumin seeds
- Crushed pepper
- 2 Green chillies optional
Soak rice in water for 30 mins. Pressure cook for 2 whistles. Chop all the veggies and keep ready.
In a kadai heat ghee and add cumin seeds. Cook till you get the aroma.
Add chopped onions and garlic. (Add chillies if required). Saute till it turns brown in colour.
Add capsicum and little salt. Cook till is 80% done. Do not overcook as it may lose its nutrients.
Add coriander leaves and mix well.
Add the cooked rice, sufficient salt and pepper. Combine together.
Capsicum and garlic rice is ready.
