Beetroot Pasta Recipe
Today I tried this pasta recipe where the veggies are roasted and grinded to make a delicious sauce. I have added mint leaves which adds a desi flavour to this pasta dish. The richness of cream and cheese brings out a wonderful taste. This looks very colourful and your kids will surely love it.

Beetroots are rich in Vitamins and nutrients. It has various vitamins including Vitamin A, B, C, K and E. And it also has potassium, calcium, magnesium etc. It cleanses the body, boosts immunity and promotes digestion.

- 3 cups Pasta
- 1 small Beetroot cut into small pieces
- 1 medium Carrot cut into small pieces
- 5 Garlic
- 1.5 tsp Chillypowder
- 1/2 cup Fresh peas
- 1/4 cup Mint leaves
- 2 tbsp Butter
- 3 tbsp Fresh cream
- 4 tbsp Grated cheese
Cook the pasta and keep it ready.
In a pan heat 1 tbsp of butter and add beetroot, carrots and garlic. Add salt and chilly powder. Cook till the veggies are nicely roasted.
Let it get cooled. Add little water and grind it to a puree.
In the pan melt the remaining butter and add mint leaves and let it get cooked. Add the peas and cook for 2 mins.
Now add the grinded paste and let it come to a boil.
Add the cooked pasta and mix well. Add sufficient salt.
Add fresh cream and mix well. Add the grated cheese finally.
Yummy beetroot pasta is ready to be served.
