Beetroot pachadi is often made in Kerala for sadhya. This dish is very healthy and tasty too.
- 2 big Beetroot select dark pink ones
- 1 cup Sour curd
- 1 cup Shredded coconut
- 1/4 tsp Cumin seeds
- 2 Green chillies
- 1/4 cup water
- 1 Garlic
- Mustard seeds
- Dry chillies
- Curry leaves
Cut beetroot into cubes and pressure cook adding water and salt, for upto 4 whistles. Add this to a blender and coarsely grind it.
In a blender take coconut, chilies, cumin seeds , little water and grind it to a fine paste.
Add this mixture to the coarse grind beetroot and boil for 2 mins. Switch off the stove. Add curd and salt. If the beetroot is not sweet enough you can add a pinch of sugar. You can add more curd to adjust the consistency.
Temper with the given ingredients.
Beetroot pachadi is ready.
